La Raclette — It must be winter!

La Raclette is one of the two most popular and traditional wintery meals in France! This rich and comforting meal is potato, cheese and charcuterie based.

Stéphane and Flavia hosted and introduced me to this very fun, interactive meal with friends.

The term raclette is derived from the French word racler, meaning “to scrape”. You place your individual small pan (known as a coupelle and used for melting the raclette cheese) under an electric table-top grill.

Stéphane masterfully performs the racler (scraping) of the melted cheese off his coupelle onto his potatoes. Stéphane just removed his hot coupelle from the electric table-top grill sitting in front of his plate.

The electric table-top grill keeps the potatoes hot on top, while having a section for the coupelles to be inserted for melting of the cheese (exactly like broiling). You can see two coupelle handles sticking out from underneath the grill.

My small coupelle (pan)..with some freshly melted raclette cheese (there are a few different pieces of pre-melted cheese above my coupelle).

If you were wondering what was the other most popular wintery dish in France…no question, hands down it’s Tartiflette!  Tartiflette is a baked dish of sliced or diced potatoes, reblechon cheese, and lardons (bacon) !  This speciality dish is the most popular in France and let’s just say, after eating tartiflette you will be in a food coma for hours, possibly days :)!
